Green Leaf Lettuce

Avaoid lettuce with leaf edges that are slimy or dark.  Leaf lettuce last longer if washed when brought home.  Soak in a sink full of cold water, swishing it to loosen dirt.  Drain and then dry lettuce thoroughly in a salad spinner or blot with paper towels.  Refrigerate, loosely wrapped in a paper towel inside a plastic bag, for up to 1 week.

A green leaf salad with cut graperuit sections, scallions, sliced cooked potatoes, crips bacon and light-lustard vinaigrette makes a good luncheon served with warm French bread.  Always add salad dressing right before serving.
