Entertaining Safely Buffet Style

Keep hot foods to at least 140 degrees by using chafing dishes, slow cookers and warming trays. Keep coold foods at 40 degrees or cooler by nesting dishes in bowls of ice or by using small serving trays and replacing often. Make sure there are plenty of serving utensils or foods are not mixing. Place chips and dips at opposite ends of the table to discourage "double-dipping". Be sure to provide serving spoons and plates for the dips and salsas.
