Nectarines

The luscious nectarine is a relative of the peach and may be used interchangeably in recipes.  the cheif difference between a peach and a nectarine is the skin.  Necatrines are availalbe year round.  Domestic nectarines are availalbe from may to October.
Avoid nectarines that have a greenish hue or are rock hard.  When ripe, a nectarine is fragrant and yields slightly to the touch.  Let stand at room temperature until ripe.  hasten the process by putting nectarines in a paper bag.  Refrigerate up to 5 days.
Nectarines do not need to be peeled before eating.  They are an excellent substitution for strawberries in a shortcake recipe.  Necatrines aare good fresh or as a cooking fruit.
