Honeydew melons picked before maturity never reach full flavor.  A good melon is symmetrical and the blossom end gives with slight pressure.  Avoid rock-hard melons and overripe melons with lumps or soft spots.  Perfectly ripe honeydews have an alomst imperceptible wrinkly on the skin's surface that can be felt.  Wrap ripe melons in a plastic bag and refrigerate up to 5 days.

Slice honeydew in half.  With a spoon, crape out the seeds.  Slice halves into 4 or more pieces.  With a sharp knife, slice between the whitish-green flesh and the deeper-green rind.  Honeydew is excellent plain or with a sprinle of fresh lime juice.  Honeydews should not be cooked.
